Enchilada Casserole 26 Recipe

Ingredients
  • 1 pound ground beef (I use ground turkey)
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 can enchilada sauce
  • 10 corn tortillas (broken into small pieces - 1 inch or so)
  • 1 cup mild cheddar cheese
Directions
Brown ground beef like you were going to make tacos... into small crumbles. When beef is cooked through, add soups, mixing into ground beef well. After the soups, stir in enchilada sauce. Drop in tortilla pieces making sure they do not touch (if they do...experience talking here... they will "clump together" like spaghetti does from the starches)

Note: I drop the pieces to sort of cover the top of the mixture then press them down with my spoon to coat the tortilla. After mixture is hot, stir in about 1/2 to 3/4 cups of cheese. Pour into casserole dish.

Top with remaining cheese. You may have to add more cheese to cover the top.

Bake in 350 degree oven until cheese melts.

Note: You can add a can of mild green chilies after the enchilada sauce. This gives it a bit more flavor without the added heat.
