Chicken and Gnocchi Recipe

  • 1 pound chicken breasts
  • 1 tablespoon garlic
  • 2 tablespoons butter
  • 1 package gnocchi (potato dumplings)
  • 1 cup cream
  • 1/2 can cream of chicken (undiluted)
  • 1 can mushrooms (half drained)
  • 1/4 cup cheese (shredded)
  • 1/4 cup Parmesan Cheese
  • 1 can olives (drained)
  • 2 tablespoons roasted red peppers, sliced
  • 2 teaspoons dried dill
  • 2 teaspoons garlic powder
  • 2 shakes crushed red pepper
In a medium heated skillet, melt butter and then put in garlic and chicken. Salt and pepper chicken on both sides. When browned on both sides and cooked through, take out of pan and set aside. Turn heat down to meat low. While making cream sauce, cook gnocchi by package directions. Add last 10 ingredients to the pan the chicken was cooked in. When the gnocchi is finished cooking, put in the pan. Dice or shred the chicken and mix into cream mixture. Heat through stirring occasionally.
