CORNISH HENS BURGUNDY Recipe

Ingredients
  • 1 - 6 ounce box wild rice mix
  • 4 Cornish hens
  • 1 cup Burgundy wine
  • 1 cup Currant jelly
  • 4 tablespoons butter
  • 2 tablespoons Lemon Juice
  • 4 teaspoons cornstarch
  • 3 teaspoons Worcestershire sauce
  • dash salt & pepper
Directions
Lightly salt and pepper hens. Cook rice according to package directions, and stuff hens. In a saucepan, combine remaining ingredients. Let bubble until thickened. Glaze hens. Place in roasting pan and cover tightly with foil. Bake at 400° for 1 to 1 1/2 hours, basting often with glaze. Serve remaining glaze as a sauce.
