1/2 cup almonds , chopped
16 ounces frozen green peas
1/2 cup green onions , chopped
1/2 cup cheddar cheese, diced
1/2 cup mayonnaise
2 tablespoons white balsamic vinegar
black pepper, to taste

In a skillet over medium heat, toast almonds in a skillet. Allow to cool.
Place peas in a strainer and run cold water over them until they are thawed. Shake excess water off and place in a large bowl.
In a small bowl, stir onions, cheese, mayonnaise and vinegar; season with pepper.
Add almonds and gently combine with peas. Cover and refrigerate until ready to serve.

I am always looking for a new salad recipe that is different from the same old, same old. This one is delicious. It has a bit of a twist with the tangy balsamic vinegar. Fresh peas would put this over the top!
