Ingredients
  • 1 mango - peeled and diced
  • 2 cups strawberries - quartered
  • 2 kiwis - peeled and diced
  • 2 bananas - sliced
  • 2 oranges - segmented
  • 3 tablespoons honey
  • 1 tablespoon Cointreau (optional)
  • 1/4 cup mint leaves
  • 1 cup raspberries

  • In a large serving bowl, add the fruit except the raspberries as they will fall apart when stirred.
  • Lightly stir the juice from the orange membranes, honey and Cointreau (if using) into the fruit. Strip the mint leaves off the stem. Roll the leaves together and finely slice into long thin pieces. Stir into the fruit salad. Add the berries and set aside for 10 minutes or up to 2 hours before serving.
