Chinese Almond Cookies 2 Recipe

  • 1 cup soft shortening (part butter)
  • 1/2 cup sugar
  • 1 egg
  • 2 2/3 cups flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 1/2 teaspoons ground cardamom
  • 1/2 cup chopped almonds (or walnuts)
  • whole almonds
Mix shortening, sugar, and egg. Add sifted dry ingredients. Add chopped nuts. Chill dough. Roll into 1 inch balls. Place on ungreased cookie sheet. Flatten slightly and brush with beaten egg yolk or canned milk. Top with a whole almond and bake at 375° for 10-12 minutes. Makes 3 1/2 doz.
