Betty's Peanut Butter Cookies Recipe

Ingredients
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt (optional)
  • 1 cup peanut butter (not natural)
  • 2 cubes butter, room temp.
  • 3/4 cup white sugar
  • 3/4 cup brown sugar, packed
  • 2 Eggs
  • 1 teaspoon vanilla
Directions
Sift together flour, baking soda, baking powder and salt. Set aside. Cream peanut butter and butter. Add sugars and continue beating. Add eggs one at a time, beating after each addition. Add vanilla and beat until very smooth. Add flour mixture in three portions, mixing well after each. Put in covered container and refrigerate overnight. Set oven temperature to 325-350° depending on your oven. Scoop spoonfuls of dough into balls and roll in sugar and put on cookie sheet. I recommend using parchment paper on the cookie sheet rather than greasing it. Flatten cookies with a fork dipped in sugar. Bake 10-12 minutes, turning the pan 180° half-way through. Cool slightly and move to racks to cool.
