Pinwheels Date filled Cookies Recipe

Ingredients
  • 1 cup Brown Sugar
  • 1 cup white sugar
  • 1 cup butter
  • 3 eggs,lightly beaten
  • 3 1/2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
Directions
Sift flour, baking soda, cinnamon and salt together. Cream sugar and shortening, add eggs and beat. Add sifted ingredients, mix. Roll dough in to 1/4" thick square.

Filling:

Cook together: 1 lb. dates (cut fine), 1/2 C. sugar and 1/2 C. water. Cool and add 1 C. nuts. Spread on dough. Roll up and chill. Slice and bake at 375° for 8- 10 minutes.
