BLUEBERRY PANCAKES 6 Recipe

Ingredients
  • PANCAKES
  • 2 cups cottage cheese
  • 3/4 cup self-rising flour
  • 2 Eggs
  • 1/4 cup sugar
  • Topping
  • 3 cups blueberries
  • 1/2 cup water
  • 3/4 cup sugar
  • 2 tablespoons margarine
  • 2 tablespoons cornstarch
Directions
PANCAKES:

Mix ingredients together. Drop by tablespoonfuls onto nonstick griddle. Cook slowly, medium heat, for several minutes on each side to allow center to cook through completely.

TOPPING:

Mix first 4 ingredients and cook for few minutes. Thicken with cornstarch. These are delicious. You will not realize there is cottage cheese in them.
