Crumble sausage and fry until slightly pink. Drain and set aside.
Unroll crescent rolls in full sheet onto a large piece of wax paper. Spread sausage evenly across rolls. Sprinkle with cheese and roll into a long roll and cover with wax paper. Let chill 15-20 minutes and slice into 1/4 - 1/2 slices and place on ungreased cookie sheet. Bake 8 minutes until light brown.
If you want to avoid frying the sausage you can spread it over crescent rolls with a fork then add cheese, roll up, slice and bake in a 325° Convection oven. Bake until light brown (apx 6-8 minutes)
