DONUT MUFFINS Recipe

Ingredients
  • 1 3/4 cups flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon Salt
  • 1/2 teaspoon nutmeg
  • 1 1/4 teaspoons cinnamon, divided
  • 1/3 cup oil
  • 1 1/2 cups sugar, divided
  • 1 egg
  • 3/4 cup Milk
  • 1/2 cup butter, melted
Directions
Preheat oven to 350°. In a large bowl, combine flour, baking powder, salt, nutmeg and 1/4 teaspoon cinnamon. In a separate bowl, combine oil, 3/4 cup sugar, egg and milk. Add oil mixture to dry ingredients and mix well. Grease the cups of a standard muffin tin. Spoon batter into prepared muffin cups. Bake in oven for 20 to 25 minutes. Meanwhile, in a small bowl, combine remaining 3/4 cup sugar and remaining 1 teaspoon cinnamon. Remove muffins from oven and let cool. Once muffins have cooled, dip the tops into the melted butter and then into the sugar and cinnamon mixture. Let cool completely before serving. Makes 1 dozen.
