Lemon and herbs in this salad offer a fresh flavor to the potatoes.

Lemon and Herb Potato Salad (+)

Directions

Cook potatoes in salted water until just tender. You don't want to over cook them. Drain and allow to cool. Cut potatoes into cubes.

In a small bowl, whisk the oil, lemon juice, and lemon peel. Add to the oil, salt and pepper to taste, green pepper, onion, cilantro, and basil. Pour dressing over potatoes.

Let stand in refrigerator for at least an hour to allow potatoes to absorb the flavors.

-		2 1/2 pounds new red skinned potatoes, unpeeled
-		3/4 cup olive oil
-		1/4 cup fresh lemon juice
-		1 1/2 teaspoons grated lemon peel
-		1 medium sized green pepper, diced
-		1 cup red onion, diced
-		1/4 cup fresh chopped cilantro
-		1/4 cup fresh chopped basil
