Twice Baked Potato & Bacon Casserole Recipe

This potato casserole is loaded with flavor provided by the bacon and two different kinds of cheese. This hearty potato dish is ideal to serve with any grilled burgers, steaks, roasts, or chops.

Ingredients
  • 12 unpeeled potatoes, baked (medium)
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 pounds bacon, cooked and crumbled
  • 4 cups sour cream
  • 3 cups shredded Mozzarella cheese
  • 3 cups shredded Cheddar cheese
Container: Deep-sided 9 x 13 baking dish
Directions
  • Preheat oven to 350 degrees F. Grease the bottom and sides of the baking dish.
  • Cut baked potatoes into 1" cubes. Place half of the cubed potatoes in the prepared baking dish.
  • Sprinkle with half of the salt, pepper and bacon. Top with half of the sour cream and carefully spread out evenly. Sprinkle half of the cheeses over the sour cream.
  • Repeat layers.
  • Bake, uncovered, in preheated oven for 30 to 45 minutes or until the cheese is melted and nicely browned.

"This is an excellent potato casserole. It has a rich cheesy flavor and the bacon makes it even better. You could use less bacon than called for but we loved it with a lot of bacon. This would make a great side for any meal."
