Colcannon (Irish) Recipe

Mashed potatoes with cabbage and onions. A tasty combination that even the non-Irish will love. The cabbage just adds so much more to those plain mashed potatoes.

Ingredients
  • 2 potatoes, peeled
  • 2 cups green cabbage, shredded
  • 1/2 cup onion, diced
  • 1/4 cup milk
  • 1 tablespoon shredded Cheddar cheese
  • salt and pepper, to taste

Peel and quarter the potatoes. Place the potatoes in a medium pot, and cover them with water. Bring the water to a boil, and cook the potatoes until they are almost tender, about 10 minutes.

Add the cabbage and onion; continue cooking until the potatoes and cabbage are soft, about 5 minutes; drain.

Add the milk and mash until potatoes are smooth.

Add cheese, if desired.

Season with salt and pepper.

"I was pleasantly surprised at how well I liked this. I did saute the cabbage and onions in a small amount of butter instead of boiling them with the potatoes. It was delicious!"
