Sweet Potato Soufflé 43 Recipe

  • 3 cups cooked mashed sweet potatoes (I use yams)
  • 1 cup Sugar
  • 1 teaspoon vanilla
  • 1/3 cup flour
  • 1/4 cup milk
  • 2 Eggs
  • 1 stick margarine
  • optional ingredients
  • 1 teaspoon cinnamon
  • 1/2 teaspoon grated orange peel
  • 2 tablespoons Orange Juice concentrate
  • Topping (mix separately)
  • 1 cup chopped nuts
  • 1 cup Brown Sugar
  • 1 stick margarine
  • 1/3 cup flour
Add together all ingredients, including those that you wish to add from the optional list. Mix well with a mixer. Combine topping ingredients and sprinkle over the top. Bake at 350° for 40 minutes. Serves 6-8 generously.

Diabetic Recipe: Sweet Potato Soufflé

In original recipe, rather than using 1 C sugar, use 4 pkg. of Sweet One and 2 tsp. white sugar. Use 1/2 or 3/4 stick of margarine rather than a whole stick. In place of the brown sugar, margarine, and flour measurements, use 2 T. of each and some Brown Sugar Twin. Taste and add accordingly.
