Baked Butter Beans Recipe

  • 6 cans butter beans (reserve 2 cup liquid)
  • 1 cup ketchup
  • 1 cup dark Karo syrup
  • 2 cups brown sugar
  • 2 teaspoons dry mustard
  • 1 teaspoon Salt
  • 1/2 teaspoon black pepper
  • 1/2 pound bacon, diced and uncooked
  • 1 onion, diced (large)
Drain beans, reserving 2 C. bean liquid. Rinse beans. Place into large casserole dish. Add diced bacon and onion. In a saucepan, mix ketchup, Karo, brown sugar, dry mustard, salt, and pepper. Bring to a boil. Lower heat and simmer for 10 minutes. Pour over bean mixture. Mix thoroughly. Place in a preheated 250° oven. Bake for 5 1/2 to 6 hours, stirring occasionally.
