Orzo with no cheese Recipe

Ingredients
  • 2 cups orzo, uncooked
  • 1/2 cup sun dried tomatoes, chopped and diced
  • 2 teaspoons parsley, finely chopped
  • 1 cup fresh corn
  • 1/2 cup onions, finely chopped
  • 1 teaspoon olive oil
  • 2 tablespoons lime juice
  • 2 tablespoons olive oil
Directions
Make orzo according to package directions; drain and set aside. Place the corn and onions on a baking sheet and spray with 1 tsp. olive oil and roast until the slightest bit golden. Remove from oven and turn off. Toss the cooked orzo and the rest of the ingredients till combined. That's it! Serve slightly warm or heat all the way though.

If serving room temp or slightly warm make sure you tell your guests it is served like that to enhance the flavors.
