Quinoa and black beans Recipe

  • 1 olive oil
  • 1 onion, chopped
  • 3 garlic, minced
  • 3/4 uncooked quinoa
  • 1 1/2 chicken or vegetable broth
  • 1 ground cumin
  • 1/4 cayenne pepper
  • salt and pepper, to taste
  • 1 frozen corn
  • 1/2 green pepper, chopped
  • 2 black beans, rinsed and drained (15 oz. cans)
  • 1/2 fresh cilantro, chopped
Heat saucepan on medium heat; add oil. Sauté onion and garlic until lightly browned.

Rinse quinoa, then add quinoa into the saucepan with onion and garlic and cover with broth. Add cumin, cayenne pepper, salt, and pepper. Bring the mixture to a boil.

Cover, reduce heat, and simmer 20 minutes,

Add corn and green pepper, and continue to simmer about 5 minutes until heated through.

Add black beans and cilantro.

NOTE: This can be served warm or cold. May be served as side dish or main dish.
