Roasted Tomato Pasta Salad Recipe

Ingredients
  • 1/2 cup chopped fresh basil
  • 1/2 cup red wine vinegar
  • 1/4 cup olive oil
  • 2 tablespoons brown sugar
  • 1 tablespoon Dijon mustard
  • 1 clove garlic, pressed
  • 10 Roma tomatoes (1 3/4 lbs)
  • 3/4 pound noodles
  • 2 ounces string cheese torn into threads
Directions
Mix basil, vinegar, oil, sugar, garlic and mustard. Pour 3 T. mixture into 10x15" Pyrex pan. Cut each tomato lengthwise into 3 slices. Turn to coat with dressing. Bake in single layer at 425° until edges are brown. Cook pasta. Rinse. Mix pasta with dressing. Mix with tomatoes. Serve.
