Best Marinated Vegetable Salad Recipe

Ingredients
  • 1 package fresh broccoli and cauliflower florets (16 ounce package)
  • 1 package cherry tomatoes (16 ounce package)
  • 1 can chickpeas, rinsed & drained (15 ounce can)
  • 1 can ripe black olives, drained & sliced (6 ounce can)
  • 1 cup slivered snow peas
  • 3 green onions, chopped
  • 1 carrot, cut into thin strips (medium)
  • 1 red pepper, chopped (small)
  • 1/2 cup olive oil
  • 1/3 cup red wine vinegar
  • 2 cloves garlic, chopped
  • 1/2 teaspoon Salt
  • 1/2 teaspoon sugar
  • 1 1/2 teaspoons chopped fresh or 1/2 teaspoon dried basil
  • 1/4 teaspoon pepper
  • Garnish: fresh parsley sprig
Directions
  1. Combine florets and next 7 ingredients in a large bowl.
  2. Process oil and next 6 ingredients in a blender until smooth.
  3. Add to vegetables tossing to coat.
  4. Cover and chill 5 hours.
  5. Garnish if desired.
