Marinated Vegetable Salad 6 Recipe

  • 3/4 cup vinegar
  • 1/2 cup vegetable oil
  • 1 teaspoon salt
  • 1 clove sugar
  • 1 tablespoon water
  • 1 teaspoon black pepper
  • 1 can LeSeur peas (17 ounce can)
  • 1 can french style green beans (16 ounce can)
  • 1 can shoe peg corn
  • 1 jar pimentos, chopped
  • 1 bell pepper, chopped
  • 1 onion, chopped (small)
For the dressing, combine vinegar, oil, salt, sugar, water and pepper and bring to a boil. This will dissolve the sugar; set aside to cool.

Drain peas, beans, corn and pimentos.

Combine all the vegetables and stir in the dressing.

Cover and refrigerate for 12 hours stirring occasionally.
