Great Gazpacho (Vegetarian) Recipe

  • 2 pounds ripe Red Tomatoes
  • 2 teaspoons minced garlic
  • 1/2 cup diced Sweet Onion
  • 1 cup coarsely chopped green bell pepper
  • 1 cup coarsely chopped Cucumber
  • Freshly ground Black Pepper to taste
  • Sea Salt to taste
  • Pinch of Cayenne Pepper
  • 1/4 cup red wine vinegar
  • 2 tablespoons olive oil
  • 1/2 cup V-8 Juice
Trim away the core from the tomatoes.

Chop tomatoes and put them in the container of a food processor.

Add garlic, onion, green pepper, cucumber, black pepper, salt, cayenne pepper, salt, vinegar, olive oil and V-8 Juice.

Blend the ingredients but leave the soup a bit coarse in textures.

Pour into a bowl and chill.

Serve with diced cucumber, diced green onions, and diced green bell pepper.
