Seafood Cucumber Appetizer Recipe

Ingredients
  • 2 cucumbers
  • 1 cup sour cream
  • 1/2 cup salsa
  • 1 cup imitation crab, chopped
  • 1 cup cheddar cheese, shredded

  • Cut cucumbers into 1/2-3/4 inch rounds.
  • With a melon baller, scoop out the middle without going all the way thru to the bottom of the center. This will make a small cucumber dish.
  • Mix together the salsa, sour cream, crab and shredded cheese, reserving some cheese for garnish.
  • Place a dap of the mixture into each of the cucumber dishes.
  • Sprinkle with shredded cheese and serve.
