Cheesy Vegetable Chowder Recipe

  • 1/2 cup onion, chopped
  • 1/2 cup celery, chopped
  • 3/4 cup Carrots, chopped
  • 1 can whole kernel corn
  • 2 cups potatoes, diced
  • 3 1/2 cups chicken broth
  • 1 clove garlic
  • Sauce
  • 1/4 cup flour
  • 1/4 cup butter or margarine
  • 2 cups milk
  • 1 tablespoon mustard
  • 1 jar diced pimentos (small jar)
  • 1/8 teaspoon Paprika
  • 8 ounces cheese (cheddar, Velveeta, or American)
Put all vegetable (except corn) in broth and cook until done. Remove from heat and add drained corn.

In a separate sauce pan mix; flour butter or margarine. Cook one minute then add milk, mustard, pimentos, paprika and cheese.

Heat until cheese melts then pour into first mixture simmer.
