Breakfast Ham and Egg Cupcakes Recipe

  • 6 slices deli ham
  • 6 eggs (medium)
  • 1 tablespoon milk
  • 1/2 teaspoon seasoned salt
  • 3/4 teaspoon black pepper
  • 1 tablespoon minced green onion
  • 2 tablespoons finely chopped bell pepper
  • 1 tablespoon chopped ripe olives
  • 1 teaspoon minced fresh marjoram
  • 1/2 cup grated sharp cheddar cheese
Spray a 6 cup muffin pan. Line with 1 slice ham forming a cup out of the ham. In a medium mixing bowl, beat eggs with milk, seasoned salt and pepper until frothy. Add green onions, bell pepper, olives, marjoram and cheese. Stir until all ingredients are blended. Spoon 1/2 cup of the egg mixture into each ham cup. Bake at 375 degrees for 20-25 minutes, or until eggs are puffed up and set. Carefully remove ham and egg cupcakes to serving platter. NOTE: I have used a regular 12 cup muffin pan and then cooked for less time.
