Root Beer Roast Beef Recipe

  • 4 pounds beef roast
  • 1 package dry onion soup mix
  • 2 cans root beer
  • carrots
  • potatoes
  • peppers
  • mushrooms
Put beef, soup mix and root beer in a crock pot and turn on high for at least 30 minutes. Reduce heat to medium and cook several hours until beef is tender. Add carrots, potatoes and peppers cut in bite sized pieces and serve when tender. We like to serve it with mushrooms and peppers sautéed in butter.

I invented this out of desperation one morning when I was putting a roast in the crock pot for our family night dinner and I needed something to flavor it up a bit. I had some leftover root beer so I added that and it was a hit! Everyone asks for Root Beer Roast Beef for their birthday dinner now.
