Mole Style Ribs Recipe

Ingredients
  • 2 racks Pork Loin Baby Back Ribs (4 pounds)
  • 6 tablespoons Adams Reserve Southwest Ancho Sear and Crust
  • 1 jar San Carlos Mole Sauce
Directions
Heat oven to 325 degrees F with one oven rack placed in bottom third of oven and a second oven rack placed 5 to 6 inches from broiler.

Season ribs with rub; press to adhere. Brush ribs with half jar of the mole sauce. Place ribs, bone-sides down, in an open roasting pan or sheet pan with sides. Roast ribs, uncovered, in bottom third of oven 45 min. - 1 hour or until meat pulls away from the bone tips. Remove from oven.

Brush ribs generously with the rest of the jar of mole sauce, Return ribs to oven and bake 15 minutes; watch carefully to prevent burning.
