When freezing whole or quartered
tomatoes, you can wait to remove the skins when they are thawed after freezing.
- Remove the stem core and leave the tomatoes whole or cut them into quarters. Place the tomatoes on a cookie sheet and freeze individually. Once they are frozen solid, place them in a sealable freezer bag and store in the freezer.
- Be sure to label and date your freezer bag. It is best to use the tomatoes within one year.
- When ready to use, remove as many tomatoes as needed and run water over them. The skins should peel off easily.
