A sweetened tomato sauce, very similar to a jelly, that is served as a condiment for bread and other foods. Since a tomato is a fruit, it is naturally well suited to be sweetened and preserved like a jam. The preserve has been enhanced with ingredients so it is not acidic, but instead provides a sweet tomato flavor. Tomato preserves, also known as tomato confitures are often placed on top of soft cheeses, which are to be spread over bread or on crackers. A tomato preserve will typically contain high fructose corn syrup, corn syrup, lemon juice, and a natural fruit pectin. It can frozen and stored for long periods of time, however, it is best used within a month or two if kept in a refrigerator.
