"I've done maybe 12 turkeys in my lifetime. A major improvement occurred when I started using an oven back to hold the juices in - and with celery carrots, onion and rosemary the meat takes on a wonderful flavor. I had a Microwave/Convection combo oven turkey cooking recipe now I'm looking for it again. Starting on microwave is a great way to shorten the cooking time - then opening the bag and cooking with convection is a fine way to "brown" the skin and meat."
