Herb Roasted Turkey Breast (Turkey Au Jus) Recipe

  • 1 Turkey Breast (4-6 lb)
  • 2 cloves garlic
  • 1 teaspoon onion salt
  • 1 teaspoon oregano
  • Paprika
  • 2 cups chicken broth
  • 2 tablespoons Dry wine or Cooking Sherry
Combine onion salt and oregano. Preheat oven to 325°. Cut skin loose from one side of turkey and make cuts into turkey breast and place sliced garlic cloves into the turkey and loosen skin on the other side of breast and sprinkle 1/2 of mixture on both sides of the turkey. Secure skin back with toothpicks. Cover outside of turkey with soft butter or oil and place remaining half of mixture and paprika on outside of turkey. Place skin side up in shallow foil lined roasting pan. Bake at 325° F. for 2 to 2 1/4 hours. Let stand 10 minutes before slicing.

In a saucepan, combine 2 cups of broth off of turkey or if needed chicken broth with dry wine and heat. Slice turkey and pour broth over turkey slices.
