Pistachio Ice cream Pie Recipe

  • 2 packages Ritz crackers, crushed
  • 1/2 cup butter or margarine, melted
  • 2 packages instant pistachio pudding mix
  • 2 cups milk
  • 1 quart vanilla ice cream, softened
  • 8 ounces whipped topping
Grease a 9x13 pan with cooking spray.

Add melted butter to the crushed crackers to make a crust; press into pan and place in freezer to set.

In mixing bowl, add milk to pudding mix and blend until smooth.

Fold ice cream into pudding until well blended.

Pour over chilled crust, top with whipped topping and return to freezer until time to serve.
