Chicken Salad Pie Recipe

A special twist is put on this chicken salad when it is prepared in a pie crust. You get a great chicken salad with a variety of textures and flavors from chicken, pineapple, celery, and almonds.

Ingredients
TOPPING:
1 cup whipped topping
1/4 cup mayonnaise
1 baked pie shell - 9-inch
3 cups chopped chicken
3/4 cup shredded mild cheddar cheese
1/2 cup chopped celery
1/2 cup sliced almonds
1/2 teaspoon paprika
1/2 teaspoon salt
1/2 cup mayonnaise
1/2 cup crushed pineapple - WELL drained

Combine all ingredients and place in pie shell.
Fold together: 1 c Cool Whip and 1/4 c Mayonnaise. Frost pie with this mixture.
Garnish with sliced almonds and shredded cheese.
Chill and cut in wedges to serve.
