The lemon cake mix makes this a quick and easy cookie recipe. You will love the nice lemony flavor of these cookies. The cake mix also gives these cookies a different texture from many other cookies.

Ingredients
  • 1 package lemon cake mix
  • 2 eggs
  • 1/3 cup oil
  • 1 teaspoon lemon extract or lemon juice (optional)
  • 1/3 cup powdered sugar
Directions
PREP

Combine first four ingredients. Roll into 1" balls then roll in powdered sugar until lightly coated.

Place on ungreased cookie sheet. Bake at 375° for 6-9 minutes. Bottoms will be lightly browned and insides chewy.
