Taquito Mexican Casserole Recipe

Ingredients
  • 2 boxes beef or chicken taquitos (18 t. boxes)
  • 1 can Rotel diced tomatoes with green chilies
  • 1 can cream of mushroom soup
  • 1 package grated mild cheddar cheese (8 ounce pkg)
Directions
In a bowl, mix the Rotel and soup together. In a 13 in. x 9 in. casserole dish, place a layer of taquitos and spread a thin layer of the mixture on them. Continue layering until all mixture is used. Top with grated cheese. Bake at 350° until heated throughout and cheese melted, (approximately 30 minutes). It can be heated in microwave for approximately 10-15 minutes.
