Ingredients
2 Eggs
1 cup Sugar
1 cup Pumpkin
1/2 cup vegetable oil
1/2 cup orange juice
2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground ginger
1/2 teaspoon nutmeg
1/2 cup Walnuts, chopped
1/4 cup dried apricots, chopped
1/2 cup dates, chopped
Directions
In mixing bowl, combine first five ingredients; mix well. Combine flour, baking soda, cinnamon, cloves, ginger and nutmeg; add to pumpkin mixture and mix well. Fold in walnuts, apricots and dates. Pour into greased 9-inch loaf pan. Bake at 350° for 1 hour and 15 minutes or until toothpick inserted near the center comes out clean. Cool 10 minutes. Remove from pan to wire rack; cook completely.
