Coconut Pumpkin Bread Recipe

  • 1 1/2 cups oil
  • 4 eggs
  • 2 cups canned pumpkin
  • 2 cups flour
  • 2 cups sugar
  • 1 teaspoon Salt
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 package coconut instant pudding (3 ounce pkg)
  • 1 cup nuts
Beat together oil, eggs and pumpkin. Add sifted dry ingredients and pudding mix. Blend, then add nuts. Bake in a well greased 9 1/2 x 4 loaf pan (2) at 350 for 60 minutes or until done. Makes 2 large loaves or 5 small loaves.
