Yellow Squash Side Dish Recipe

Ingredients
  • 2 Eggs
  • 1 cottage cheese
  • 1 minced onion
  • 2 flour
  • 2 chicken bouillon granules
  • 8 sliced yellow squash, cooked and drained
  • 1 shredded cheddar cheese
  • 6 bacon, cooked crisp (crumbled)
Directions
In a large bowl, combine eggs, cottage cheese, onion, flour and bouillon. Add squash and mix well. Pour mixture into an 11x7" or 9x13" baking dish. Top with Cheddar cheese and bacon. Bake at 350° for 25 minutes. Let stand 5 minutes before serving. Makes 6 servings.
