Ingredients
4 18"x12") pieces of heavy-duty aluminum foil
vegetable cooking spray
2 yellow squash, sliced (medium)
1 onion, cut into 4 slices (large)
1 tomato, cut into 4 slices (large)
2 tablespoons white wine vinegar
1 tablespoon Dijon mustard
1/4 teaspoon salt
1/4 teaspoon pepper
2 teaspoons grated parmesan cheese
Directions
Coat aluminum foil with cooking spray. Place squash evenly in center of each; top with onion and tomato slices. Combine vinegar, mustard, salt and pepper; drizzle evenly over vegetable bundles. Sprinkle evenly with cheese and seal securely. Bake on baking sheet at 400° for 20 minutes or until vegetables are tender.
