Vegetable Medley 4 Recipe

Ingredients
  • 1 1/2 cups sliced onion
  • 1 celery strips (2 cup 2 inch )
  • 1 carrot strips (1 1/2 cup 2 inch )
  • 1 green pepper strips (sweet pepper) (3/4 cup 2 inch )
  • 2 cups fresh, frozen, or canned beans
  • 2 cups fresh or canned tomatoes
  • 4 tablespoons butter
  • 1 tablespoon sugar
  • 2 1/2 teaspoons salt & pepper to taste
  • 3 tablespoons tapioca
Directions
Combine all except beans. Bake at 350° for 3 hours covered. If using fresh beans, add immediately. If using canned or frozen beans, add last half hour of baking.
