Vegetable Loaf Recipe

  • 1 eggplant (large)
  • 2 onions, chopped (medium)
  • 2 tablespoons dried parsley
  • 2 tomatoes, diced
  • 1 stalk celery, diced
  • 1 green pepper, chopped
  • 1 cup scallions, chopped
  • 1 egg beaten
  • 1/2 cup oatmeal
  • 1 teaspoon oregano
  • 4 tablespoons oat bran
  • 1 garlic clove, minced or 1 teaspoon garlic powder
  • 1/2 teaspoon Salt
Heat oven to 350°F. Peel and chop eggplant fine or grind in food processor. Sauté eggplant, onions, parsley, tomatoes, celery, green pepper and scallions. Transfer to mixing bowl and let cool. Add egg, 1/3 C. oatmeal, oregano, oat bran,minced garlic or garlic powder, and salt. Place in greased baking pan. Sprinkle with remaining oatmeal. Bake for 25 minutes.
