Sweet Potato Salad 2 Recipe

Ingredients
  • 2 1/2 sweet potatoes
  • 1 tablespoon Dijon mustard
  • 3 tablespoons olive oil
  • 1/2 teaspoon Salt
  • 1/8 teaspoon black pepper
  • 1 clove crushed garlic
  • 1/2 tablespoon dried cilantro
Directions
Boil potatoes until tender. Let them cool and then peel and cut in cubes. Mix with remaining ingredients. Serve warm or at room temperature.
