Quick Southern Caviar (Vegetarian) Recipe

  • 1 can Black-Eyed Peas (15.8 ounce can)
  • 1 can Yellow Corn (11 ounce can)
  • 3 Plum/Roma Tomatoes, seeded and chopped
  • 1 Sweet Onion, chopped (small)
  • 1 cup Picante Sauce/Salsa
  • 1/4 cup chopped fresh cilantro
  • 2 cloves garlic, minced
  • 2 tablespoons fresh lime juice
  • Tortilla Chips
Rinse and drain peas and corn.

Combine peas, corn, and remaining ingredients in a serving bowl. Mix well.

Cover and chill for at least 2 hours.

Yield: 4 cups.

Serve with tortilla chips.
