Ingredients
1/2 loaf sour dough French bread
1/2 cup Milk
1/2 cup water
2 tablespoons olive oil
1 onion, chopped very fine (medium)
1 clove garlic, minced
1 teaspoon Italian seasoning
1/4 cup chopped fresh parsley
2 pounds lean ground sirloin
1 teaspoon Salt
1 teaspoon pepper
1/2 teaspoon nutmeg
1 bunch Swiss chard, no stalks, cooked and chopped fine or 2 pkgs frozen chopped spinach, thawed and squeezed for liquid
5 eggs, unbeaten
8 ounces freshly grated parmigiano cheese
Directions
Cut loaf of bread in half lengthwise, and soak in a bowl with the milk and water solution. While that's soaking, Heat olive oil in fry pan and add onion, garlic, Italian seasoning, and parsley. Saut until tender, adding ground beef. Break up with a wooden spoon as it browns, adding salt, pepper, nutmeg, and Swiss chard or spinach. While that's cooking, remove crust from soaking bread and squeeze thoroughly. Put in bowl and squish into little pieces. Add eggs and cheese, mixing with a large fork. Add the ground meat mixture and let stand until cool. Filling must be cool to make the ravioli pies!
