An immature ear of corn, less than 3 inches in length, that is harvested after 40 to 45 days of growth. Typically, this vegetable is canned in water or pickled. It is served in salads, as an hors d'oeuvre, cooked in side dishes, or as a garnish. The entire ear of corn is eaten, providing a crispy, mild flavored vegetable. Baby corn may also be referred to as cocktail corn.
