  • 1 tablespoon butter
  • 1 cup fresh mushrooms, chopped
  • 1/4 cup onion , chopped
  • 4 garlic cloves , minced
  • 1 tablespoon lemon juice
  • 1/4 cup fresh rosemary , minced
  • 1/3 cup grated Romano cheese
  • 1 egg yolk
  • 3/4 teaspoon pepper
  • 1 teaspoon salt
  • 3 pounds pork loin
  • 1/4 cup Dijon mustard
Directions
  • For filling, in saute pan cook mushrooms and onion in butter over medium-low heat until tender, stirring frequently. Add garlic and cook 1 minute more. Remove from heat, stir in lemon juice, rosemary, egg yolk and cheese; set aside.
  • Butterfly the pork loin by cutting through roast horizontally to within 1/4-inch of the other side. Do not cut all the way through. Open out and pound to roughly a 6x8-inch rectangle.
  • Spread filling evenly onto meat. Season with the salt and pepper. Roll up lengthwise; tie with kitchen string at 1 to 2 inch intervals to secure.
  • Rub Dijon mustard over the pork loin. Place it in shallow pan and roast in a 350 degrees F. oven for 45 to 50 minutes or until internal temperature reaches 155 degrees F.
  • Remove from oven, let rest for 10 minutes. Remove string and slice to serve.

  • 5 large Yukon Gold potatoes
  • 4 tablespoons butter or margarine
  • 1 small onion, minced
  • 4 tablespoons flour
  • 1 teaspoon salt
  • 2 1/2 cups milk
  • 2 cups shredded Colby Jack cheese
  • paprika
Directions
  • Preheat the oven to 375°F.
  • Peel the potatoes and slice into 1/8 inch or less thick slices. Cover with cold water and set aside while preparing the sauce.
  • Heat the butter until hot in a saucepan over medium heat. Add the onions and cook until they are tender and starting to brown, approximately 5 minutes.
  • Stir in the flour and salt; cook for about 1 minute.
  • Gradually stir in the milk. Continue to stir as the mixture cooks. Cook until the mixture just comes to a boil and has thickened.
  • Remove from the heat and add 1/2 cup of the shredded cheese. Stir until it is all melted.
  • Drain the potatoes and pat dry with paper towels.
  • Layer half of the potato slices in the bottom of a 3 quart baking dish.
  • Spread have of the sauce over the potatoes and then sprinkle with half of the remaining shredded cheese.
  • Layer the other half of the potatoes on top of the sauce and cheese.
  • Spread the remaining sauce over the potatoes and sprinkle the remaining cheese on top of the sauce.
  • Sprinkle the top with paprika.
  • Cover the dish with foil and place it in the preheated oven. Bake for 1 1/2 hours covered.
  • Remove the foil and test for doneness. If the potatoes are close to being done when poked with a fork, leave the foil off and bake for another 15 to 20 minutes uncovered.
  • If the potatoes do not feel close to being done, cover them back up and bake for another 15 to 20 minutes before baking uncovered.

Directions
Preheat oven to 425°.

Cut broccoli into bite size pieces. Place broccoli in a mixing bowl and toss with olive oil, garlic, salt and pepper. Set aside.

Spread Panko bread crumbs into 9x13" metal cake pan. Place in oven for 2 minutes or until lightly toasted.

Remove crumbs from oven and add to broccoli mixture. Toss to combine. Return mixture to cake pan and place in oven, roasting until broccoli is tender, approximately 8-10 minutes.

Remove from heat, toss with cheese and serve.

  • 2 jalapeno peppers, seeded and minced
  • 2 cloves garlic, minced
  • 7 ounces canned corn, drained
  • 1 teaspoon ground cumin (adjust to taste)
  • 1 teaspoon dried oregano
  • 1/4 teaspoon ground thyme
  • 3/4 teaspoon salt (adjust to taste)
  • 1/4 teaspoon coarse ground black pepper (adjust to taste)
  • 2 cups cooked rice
  • 19 ounces canned black beans, drained
Directions
  • Prepare rice according to directions on box.
  • In a large skillet, cook sliced sausage* over high heat until browned, stirring several times to avoid burning.
  • Remove sausage from pan and add oil, onions, zucchini, peppers, garlic, corn, and dry seasonings. Cook for 5 to 7 minutes over medium heat, stirring frequently.
  • Add cooked rice and the beans, continuing to cook until all ingredients are hot.
  • Remove from heat and add sausage. Season to taste and serve.

  • Line bottom of 9 x 13 pan or dish with ice cream sandwiches. Press the sandwiches into the pan so that the cracks fill in and there is no space around the edges.
  • Spread caramel sauce over top. Spread cool whip over this.
  • Chop Butterfinger candy bars (6 small candy bars that are about 2" long) and sprinkle over top.
  • Put in freezer for at least 2 hours before serving.

Directions
  • Combine seasoning ingredients in small bowl; press evenly onto beef steaks.
  • Place steaks on grid over medium, ash-covered coals. Grill, uncovered, 14 to 16 minutes (over medium heat on preheated gas grill, covered, 15 to 19 minutes) for medium rare (145°F) to medium (160°F) doneness, turning occasionally.
  • Remove bones from steaks; carve into slices. Season with 1 teaspoon peppercorns and salt, as desired.


Cook's Tip: To easily grind whole peppercorns, use a pepper mill or coffee grinder (used only for seasonings). They can also be crushed in a food-safe plastic bag. Place the peppercorns in the bag, squeeze out the air and seal. Use the bottom of a custard cup, rolling pin or side of a heavy pan to crush the peppercorns.

SAUCE:
  • In a saucepan, whisk all the sauce ingredients with 1/2 cup of water.
  • Bring to a bowl over medium high heat then reduce heat and simmer for 10-18 minutes, stirring occasionally.
NEW YORK STRIP:
  • Trim the exterior fat from the steaks if desired. Allow the steaks to stand at room temperature for 20 minutes before grilling.
  • Rough chop garlic on a cutting board and then sprinkle it with salt.
  • Using the sharp edge and flat side of a knife blade, crush the garlic and salt together to create a paste.
  • In a small bowl, mix the garlic paste with the oil, rosemary and pepper.
  • Smear the mixture evenly all over the steaks.
  • Grill over direct heat until cooked to desired doneness, turning once.
  • Six minutes for medium rare, eight minutes for medium, etc.
  • Remove from the grill and allow to rest for 5 minutes before serving.
  • Serve with barbecue sauce.

  • 1 head Romaine lettuce (large head)
  • 1 can anchovies, minced
  • 3 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce

  • 1/3 cup extra virgin olive oil
  • 1/4 teaspoon black pepper
  • 1/2 cup Parmesan Cheese
  • 1 cup croutons
Directions
Cut romaine into bite-sized pieces.

Drain anchovies, reserving oil from the can. Mince and combine anchovies and garlic in a large bowl, mash with the back of the wooden spoon, stir in Worcestershire sauce and the juice of one lemon. Add olive oil to reserved anchovy oil to make 1/3 cup combined oil; whisk into anchovy-garlic-lemon mixture. Toss with Romaine lettuce.

Toast croutons just before tossing with salad and just before serving. Serve with freshly shaved Parmesan cheese and plenty of ground black pepper.

  • 4 green onions, sliced
  • 2 cloves garlic, minced, divided
  • 1 piece fresh ginger (1 inch piece), peeled, minced, divided

  • 2 tablespoons sugar
  • 4 teaspoons cornstarch, divided
  • 1 teaspoon salt
  • 1 tablespoon sherry
  • 1 tablespoon sesame oil
  • 1/3 cup water
  • 3 tablespoons vegetable oil, divided
  • 16 ounces broccoli
  • 1/2 cup carrots, sliced
  • 1 tablespoon hoisin sauce
Directions
In a medium bowl, toss the chicken, scallion whites, half the garlic, half the ginger, soy sauce, sugar, 1 teaspoon cornstarch, salt, sherry and sesame oil. Marinate at room temperature for 15 minutes.

Mix the remaining cornstarch with 1/3 cup cold water.

Heat a large nonstick skillet over high heat. Add 1 tablespoon oil. Add the broccoli and carrots. Stir-fry for 2 minutes. Add the remaining garlic and ginger and 2 tablespoons water, season with salt and pepper. Stir-fry until the broccoli is bright green but still crisp, about 2 minutes. Transfer to a plate.

Heat the skillet to high again. Add remaining 2 tablespoons oil. Add the chicken mixture. Stir-fry until the chicken loses its raw color and gets a little brown, about 3 minutes.

Add the hoisin sauce and broccoli mixture to the pan. Toss to heat through.

Stir in the reserved cornstarch mixture and bring to a boil to thicken. Add more water if need to thin the sauce, if necessary. Taste and season with salt and pepper, if you like.

Serve with rice, if desired.

  • 1 package cellophane noodles
  • 1 tablespoon sesame oil or olive oil
  • 2 cloves garlic - minced

  • 2 chicken breasts - cooked and diced
  • 1 cup carrot - shredded
  • 1 cup cabbage - shredded
  • 2 tablespoons teriyaki sauce
  • 3 green onions - chopped
  • 1/4 cup golden raisins - optional
  • 14 egg roll wrappers - or spring roll wrappers
Directions
  • Soak cellophane noodles in hot water for 10 minutes, drain.
  • Heat oil in a large skillet over medium heat.
  • Add garlic and ginger and cook for 1 minute.
  • Add chicken, carrots, cabbage and teriyake sauce and cook for 5 minutes.
  • Add the noodles and green onions, stir to combine.
  • Take the egg roll wrapers one at a time and top with the chicken mixture down the center.
  • Lay the wrapper with a point towards you, fill from point to point going across the wrapper. Roll up the bottom point over the top of the filling. Fold in the sides and continue to wrap up to the other point.
  • You can either steam them in the top of a steamer basket or fry them in 1 cup of canola oil until nicely browned, flip and brown the other side for approximatley 3-5 minutes each side. If you are going to steam them, lay lettuce leaves out to cover the bottom on the steamer so the rolls won't stick.

  • 3 cups carrots, peeled, grated
  • 2 cups sugar
  • 1 1/4 cups oil
  • 1 tablespoon cinnamon

  • 3 cups flour
  • 1 cup black walnut pieces (optional)
  • FROSTING:
  • 1/2 cup butter, softened
  • 8 ounces cream cheese, softened
  • 1 tablespoon vanilla
  • 4 cups powdered sugar
Directions
Preheat oven to 350 degrees F. Grease and flour a 9x13 inch pan.

Shred carrots in food processor or grate by hand. Set aside.

Combine sugar, oil and eggs and beat until well mixed.

Add cinnamon, baking powder, baking soda and salt. Add flour and mix well. Batter will be stiff.

Stir in shredded carrot and nuts, if desired.

Spread into prepared pan. Bake for 45 minutes until toothpick comes out clean.

Cool on a rack for about 2 hours. Frost with cream cheese frosting.

For frosting, cream together cream cheese and butter until smooth. Add vanilla and powdered sugar until desired consistency.
