BAKED FLOUNDER AMANDINE Recipe

Ingredients
  • 2 pounds flounder fillets or other fish fillets
  • 1/4 cup salad oil, butter or other fat, melted
  • 1/4 cup lemon juice
  • 2 teaspoons salt
  • 2 teaspoons paprika
  • Dash of pepper
  • 1/2 cup blanched slivered almonds
Directions
If frozen fillets are used, thaw. Skin fillets if necessary. Cut fish into serving size portions. Place fish in well-greased baking pan 13x9x2. Combine fat, lemon juice, salt, paprika and pepper. Pour over fish. Sprinkle with almonds. Bake in 350° oven for 20-25 minutes or until fish flakes easily when tested with fork. Remove from oven. Place in broiler about three inches from source of heat. Broil for two to three minutes or until brown. Serves 6.
