Bobotie (South Africa) Recipe

Ingredients
  • 1 slice homemade type white bread, 1 inch thick, broken into small bits
  • 1 cup milk
  • 2 tablespoons butter
  • 2 pounds coarsely ground lean lamb (I use ground beef and it tastes great)
  • 1 1/2 cups finely chopped onion
  • 2 tablespoons Madras type curry powder
  • 1 tablespoon light brown sugar
  • 1 teaspoon Salt
  • 1/2 teaspoon black pepper
  • 1/4 cup lemon juice
  • 3 Eggs
  • 1 tart cooking apple, peeled & finely chopped (medium)
  • 1/2 cup raisins
  • 1/4 cup almonds, coarsely chopped
  • 4 fresh lemon or orange leaves or 4 small bay leaves (small)
Directions
Combine bread and milk and let soak 10 minutes. Melt butter in frying pan and sauté lamb or ground beef. Remove meat from pan and pour off all but 2 tablespoons fat from the skillet and add onions. Cook onions until translucent. Add curry powder, sugar, salt and pepper and stir 1 to 2 minutes. Stir in lemon juice and bring to a boil. Add meat and stir. Set aside. Drain bread and squeeze dry. Reserve milk. Add bread, 1 egg, apple, raisins and almonds to meat mixture. Combine well and taste for seasoning. Pack into a baking pan. Tuck in lemon or bay leaves. Beat 2 eggs and milk. Pour over meat. Bake 30 minutes. Serve with rice.
