Salt bird inside and out.
Stuff if desire.
Rub bird with soy sauce, then salad oil.
Breast side up. No rack--no covering. Put turkey in oven.
Roast for 1 hour at 400 basting twice in this hour.
Turn pan around.
Pour 2 cups boiling water over bird.
Reduce oven heat to 350 and roast for 45 minutes longer.
Do not baste.
When legs crack and move easily, turkey is done.
For larger birds, merely extend 350 roasting time but test ever 5-10 minutes for doneness.
The tendency is to overcook bird as cooking time seems so short.
