Shrimp Scampi 6 Recipe

  • 1/4 cup olive oil
  • 4 pounds peeled and deveined large shrimp (raw; 20-25/lb)
  • 4 garlic cloves, unpeeled and forced through garlic press (large)
  • 1/2 teaspoon dried hot red-pepper flakes
  • 1/2 cup dry White Wine
  • 1/2 tablespoon black pepper
  • 5 tablespoons unsalted butter
  • 3/4 pound angel hair pasta
  • 1/2 cup chopped fresh flat leaf parsley
Bring 6-8 quart pot of salted water to a boil. Meanwhile, heat oil in a 12" heavy skillet over medium high heat until hot. Sauté shrimp, turning over once until just cooked through, about 2 minutes. Transfer shrimp to a large bowl. Add garlic, red pepper flakes, wine, salt, and black pepper to the remaining oil in the skillet. Cook all over high heat, stirring occasionally, for 1 minute. Add butter to skillet, stirring until melted and then add the shrimp back in to the mix. Remove skillet from heat. Cook the pasta as directed on the box. Toss pasta and shrimp mixture together in a large bowl. Serve garnished with fresh parsley and fresh Parmesan if you like.
